Breakfast Menu

Traditional Scone Recipe

Ingredients

2 1/2 cups all purpose flour

1 tbls baking powder

1/4 tsp salt

8 tbls cold unsalted butter, cut up

1/3 cup sugar

2/3 cup milk

Instructions

  1. Pre-heat oven to 425 F

  2. Add flour, baking powder and salt into a large bowl. Stir Well.

  3. Add butter and cut with a pastry blender or rub together with your fingers until the mixture looks like fine graduals.

  4. Add sugar. Stir slightly.

  5. Add milk and stir with a fork until a dough forms.

  6. Form dough into a ball. Pat or roll into 6 inch circle.

  7. Cut into even size wedges.

  8. Line baking sheet with parchment paper. add wedges.

  9. Sprinkle with sugar on top of each scone.

  10. Bake for 10-12 minutes until slightly brown on top.

Banana Bread

Ingredients

1 egg

1 cup sugar

1/3 cup vegetable oil

1 tsp salt

3 very ripe bananas

1 1/2 cup flour

1 tsp baking soda

Instructions

  1. Mix egg, sugar, vegetable oil and salt in a large bowl.

  2. Mash bananas with a fork and add to bowl. Mix.

  3. Add flour and baking soda. Stir until just combined. Do not overmix.

  4. Add to loaf pan and bake at 350 F for 1 hour or until brown on top and toothpick comes out clean.

Pumpkin Crumb Cake

Ingredients

Cake:

2 large eggs

1 cup sugar

1 cup pumpkin puree

1/2 cup vegetable oil

2 tsp pumpkin pie spice

1 tsp vanilla extract

1 cup all purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Crumb topping:

3/4 cup all purpose flour

1/4 cup sugar

1/4 cup light brown sugar, packed

1/4 tsp salt

6 tbls unsalted butter, melted

Instructions

  1. Preheat oven to 350 F. Spray 8x8 pan with non-stick spray.

  2. Add the eggs, sugar, pumpkin, oil, pumpkin pie spice and vanilla to a large bowl. Whisk to combine.

  3. Add the flour, baking powder, baking soda, salt, and stir until just combined, do not overmix.

  4. Add batter to 8x8 pan.

  5. For Crumb topping: Add the flour, sugars and salt to a medium bowl. Stir with fork to combine.

  6. Add melted butter evenly to bowl, mix with a fork to combine until small pebbles form.

  7. Evenly sprinkle the crumb topping over the cake and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Bacon Eggs Benedict

Ingredients

To make one serving

1 egg

2 strips of cooked bacon

1/2 english muffin

Chives

Salt and pepper to taste

1 tbls white vinegar (for poaching egg)

Hollandaise (makes about one cup)

8 tablespoons butted unsalted

1 egg yolk

1 tsp fresh lemon juice

1 tsp water

1 tsp Dijon mustard

1/4 tsp salt

1 pinch cayenne pepper

Instructions

  1. To make Hollandaise: Whisk together yolk, lemon juice, water, mustard, salt, and cayenne pepper. Add to blender.

  2. Melt butter. In a very slow stream, drizzle the hot butter into the egg mixture while blending on high in a blender until desired consistency.

  3. To poach egg: Fill a saucepan halfway with water and bring to a low boil.

  4. Add white wine vinegar and swirl the water

  5. Crack egg into small dish then add to swirling water.

  6. Cook for 2 minutes then remove with slotted spoon.

  7. Assemble: Toasted english muffin down first, then bacon, egg, hollandaise, salt and pepper and chives.
